Salad & Basic Dressings

Mayonnaise
Preparation Time: 10 Minutes
Serves 6-8


Ingredients:
2 egg yolks
2 t Dijon mustard
1-2 T white wine vinegar
1 c olive oil
salt and pepper


1.  Put the egg yolks, mustart, 1 T vinegar, and a little salt and pepper into a large bowl and beat lightly with a whisk to combine.


2. Beating continuously, start adding the olive oil, a few drops at a time, until the sauce starts to thicken. Gradually add the remaining oil in a thin, steady stream until the mayonnaise is thick and glossy. Don't add the oil too quickly or the mayonnaise may start to separate. [If this happens, try beating in 1 T warm water. If the mixture curdles completely, beat another egg yolk in a separate bowl and gradually beat it into the curdled space].


3. Check the seasoning, adding a little more vinegar if the sauce tastes bland. Mayonnaise can be kept, covered, in the fridge for up to 2 days.



Vinaigrette
Preparation Time: 10 minutes
Serves: 4


Ingredients:
1 t superfine sugar
pinch of powderred mustard
2 T wine vinegar
4-6 T olive oil
salt and pepper


1. Beat together sugar and mustard with the vinegar.


2.  Add the oil, season to taste with salt and pepper, and mix together thoroughly.




Low-Cal French Dressing
Preparation Time: 10 Minutes
Serves: 8


Ingredients:
1/2 small onion
6 T olive oil
2 T wine vinegar
1/2 t mustard
1/2 T superfine sugar
pinch of ground coriander
3 T chopped parsley
salt and pepper


1. Grate the onion. Beat together all the ingredients until thickened. Season to taste with salt and pepper.
